10 Day Bran Muffins

1 cup brown sugar – ¾ cup fructose

2 TBsp flax or chia seeds with 2 Tbsp water

Half a cup coconut oil

2 cups digestive bran

1 cup nutty wheat flour or Mary-Ann’s gluten free brown bread flour

1 ½ cups gluten free baking flour

2 cups plant milk

Pinch of salt

2 tsp vanilla essence

1 cup raisins, pecans, dates, of what have you!

Blend seeds well until fin and then soak in water – add more water if needed.

Add the fructose and beat well.

Add the oil and beat well.

Mix in rest of the ingredients.

Can be baked immediately at 180 deg. for 10 – 15 mins.
